Time to talk Turkey Meatballs. I’ve tried so many recipes over the last few years but I finally made it! I found what I think is the right mix and proportions of ingredients that’ll give you moist, warm meatballs and -if you want- spicy meatballs.
Spaghetti and meatballs, meatball soup, meatball salad, meatball sandwich… really, you can use this recipe for these dishes and more! The trick? Caramelized onions and ground cinnamon. Ok, I’ll stop talking and will show you how to do it.
1.5 lb. ground turkey.
1 whole egg
1 medium yellow onion.
1/2 cup Italian breadcrumbs.
1/3 cup finely chopped parsley.
1 tbsp powdered garlic.
½ tsp ground cinnamon.
1 tsp pepper flakes (add more if you want them spicy).
1 tsp salt.
1 tsp pepper.
Preheat your oven at 400 degrees.
Use a large cast iron skillet and a tablespoon of olive oil to caramelize your onion at medium heat. This should take you around 5-8 minutes. Remove the onions from skillet, let them cool and reserve.
In a large bowl, add all of the ingredients, including your onions and mix using your hands. Be careful not to overmix, you will end up with a mixture where you can identify your ingredients by eye.
Use an ice cream scoop to form your meatballs, this way you will have the same size in all of them.
Put the cast iron skillet back to medium heat and add a tablespoon of olive oil again. Add all of the meatballs (or badges of them, depending on the size of your skillet) to the pan and sear them for about 5 minutes.
Carefully, take your cast iron skillet into the oven and bake for 12-15 minutes.
And you’re done! All you need now is some marinara sauce, some sourdough bread and call it a day!
