How to make a Cucumber and Beets salad

Spring is calling for salad time! I actually love the beets flavor and after making a poll on instagram last week, I know you do too! So let’s get to it now.


  • 2 beets, cooked and sliced

  • 1 large cucumber, sliced

  • 2 tsp of finely chopped dill

  • A handful of crunchy lettuce, I used 80 Acres Farms products.

  • Feta cheese to taste or Tofu to make this a full meal

For the dressing

  • 4 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1/2 tsp garlic powder

  • 1/2 tsp kosher salt

  • Black pepper to taste


  1. Use a large bowl and mix all the dressing ingredients. Add the rest of ingredients to the same bowl, adding lettuce last, mix carefully not to break the greens too much and serve.
