Quick and Easy Seafood Soup Recipe

Happy Autumn!

Hey guys, hope you all are healthy both mentally and physically these days! Well, Summer is gone, and colder days are coming so it’s time for hot seafood to join the party.

“Caldo Largo” (“Long Soup” in Spanish) is a northern México seafood soup that inspired me today, it consists of a delicious and deep yet simple broth with many, many seafood types in it (very similar to the French bouillabaisse but not quite the same).

If you follow me on Instagram, you already know I am obsessed with my shrimp and anchovies’ powders and this recipe is the PERFECT use for them.

Aside of the healthy aspect of this recipe, you will LOVE it really fast; reasons?

- You can use leftover rice or quinoa.

- You can use frozen vegetables, in fact, I highly encourage you to use them.

- The soup is ready to go in 15 minutes, yes, FIFTEEN MINUTES!



INGREDIENTS

  • 2 pieces of frozen fish (I’m using salmon today because that’s all I had but you can use Cod, Tilapia or any other piece you have in the freezer).

  • 5 pieces of frozen shrimp.

  • 1 cup of cooked rice (you can use leftover rice; I’m using Jazmin rice today).

  • 2 cups of frozen vegetables (peas, carrots, fennel).

  • 5 cups of water (or more if needed).

  • 1 tsp. kosher salt.

  • 1 tsp. black ground pepper.

  • 1 tsp. hot paprika (or Chile Colorado if you know what that is).

  • 1 tsp. turmeric powder.

  • 2 tbsp. Shrimp powder (dry shrimp, baked and blended).

  • 1 tbsp. Anchovies powder (dry anchovies, baked and blended).

  • 1 tsp. Onion powder.

  • 1 tsp. Garlic powder.

  • 1 tsp. cumin seeds.

  • 1 tsp. fish oil.

PROCEDURE

  1. Use a large saucepan in medium high heat to add 1 tbsp of ghee or olive oil. Add rice and almost fry it for just 2 minutes.

  2. Lower the heat to medium low and add the REST of ingredients, yes, all of them at ONCE! It’s that easy! Simmer for about 15 minutes or until the fish and shrimp are cooked.

Serve this soup hot with some scallions, parsley, some hot sauce and lime juice! Note: I LOVE this soup with Cholula and please use lime, not lemon!

Please do this, it’s a GREAT recipe to incorporate carbs, veggies and protein in a VERY easy and flavorful way!
