Parsley Rice Recipe

There’s been an obsession with Italian parsley in my household for the past two years or so, we’re basically slowly migrating from cilantro to this other herb and now it’s time for rice to get green.


You can use this recipe in many ways as a side or bed for any protein, but it matches perfectly with chicken, just saying.

INGREDIENTS (2 portions)


  • 1 cup uncooked Jazmine rice.

  • 1 cup Italian parsley, finely chopped.

  • 1 tablespoon of rice Furikake seasoning.

  • The juice of 1/2 lime.

  • 1 teaspoon of ghee, optional.

  • 1 teaspoon of olive oil, optional.


PREPARATION


  1. Optional Step. Before cooking it, sauté your rice in a hot pan with an olive oil and ghee mixture for about 3 minutes or until some of the rice turns white/opaque.

  2. Cook your rice according to your packaging instructions.

  3. Let your rice cool, add parsley, furikake and lime juice, mix well to incorporate all of the ingredients together and you’re done!

You can always serve it with some pickled red onions,
