Guacamole with Kale recipe

Viva México! For those celebrating the Mexican Independence day I have a super healthy guacamole recipe, I mean, who doesn’t use avocados in any holiday? Well, this day isn’t the exception for all my Mexican fellows.


Today I have a delicious deviation of the standard dip, my “GUA-KALE-MOLE” which ohhh I’m sure you will love it!


INGREDIENTS (4 portions)

  • 4 medium avocados (you can tell if the avocado is ready to eat if you take a look under the dry little button on the stem end, if its brownish I would say it’s perfect).

  • ½ tablespoon of pink salt.

  • ½ tablespoon of black pepper.

  • ½ small diced Serrano pepper.

  • The juice of 1 lime.

  • A handful of chopped kale (spinaches work good as well) .

  • A Handful of chopped cilantro.

  • ¼ cup of “fresco cheese” (this is a Mexican cheese that you can find in some stores in the US but Farmers cheese it’s a perfect substitute).

PREPARATION (4 minutes)

  1. Take the flesh of the avocados and use two forks and a big bowl to mash all the 4 avocados.

  2. Add the chopped Serrano pepper, lime juice, kale, cilantro, salt and pepper and mix it all together.

  3. To serve, just add the cheese on top and enjoy with some chips (today I’m using kale chips I found in Costco).
