Asparagus - Kale soup recipe

Hi everyone!

So sorry I haven’t post as much as usual. It’s been a couple of crazy weeks here, a mix between moving out from Madison and too much work! I spent the last two weeks in Madison, Wi for work and as you know, these days have been a bit cold there; I got home just this past weekend to find out I’m starting to get a cold. So my solution is to add as much antioxidants to my body as I can.

Today I have for you my “Asparagus and Kale Cream”, which is full of vitamins and protein. Hope you enjoy!

INGREDIENTS (serves 4)

  • 4 cups of asparagus

  • 3 cups of kale

  • 1 medium tomato

  • ¼ red onion

  • ½ teaspoon of coriander seeds

  • 3 tablespoons of hemp seeds

  • 2 cloves of garlic

  • 2 cups of almond milk

  • 4 cups of vegetable broth

  • 1 tbs pink salt

  • 1 tsp black pepper

  • 2 fresh basil leafs

PREPARATION (25 minutes)

  1. You will love this part. Just put everything in a large pot with 2 tablespoons of olive oil in a medium heat for about 5 minutes and then add all the liquids. Cook with the lead on for 20 minutes and then blend everything together until you get a creamy mixture.

To garnish just use more hemp seeds and basil.
