Protein - Almond Cookie recipe

Hey! Hello! Hope everyone is doing great! I don’t know about you but I’m still carrying holiday weight with me (Yes! And it's February already!), the good thing is that I know where this weight is coming from… SWEETS; I love sweets, I’m sorry I can’t help it I just love them.

But enough! Today’s recipe is all I need to go back to the right path. You are going to love this one and please don’t be afraid of it's name, I’m sure you have the ingredients in your pantry, just try it… you can thank me later J

Keep reading because today you’re going to make “Protein-Almond Cookies” which is my take on the traditional sugar cookie.


INGREDIENTS

  • 2 whole eggs

  • 1/3 cup coconut sugar. Note: I’m just using coconut sugar because I love its flavor but you can use maple syrup or brown sugar.

  • ½ cup of protein powder (2 ½ scoops). As you know VEGA is my favorite brand, I’m using the vanilla flavor.

  • 1/3 cup of almond butter.

PREPARATION

  1. Preheat the oven to 350 degrees.

  2. Put all the ingredients in a big bowl and mix until you get a traditional-like cookie dough.

  3. Now you can either use a spoonful of mixture to make each one of the cookies or you can do what I did: rolling the dough in a flat surface (1/2-inch-thick) and use a cookie cutter to get a round shape.

  4. Put the cookies in a baking sheet layered with parchment paper and bake for 11-13 minutes. Note: 11 minutes = soft cookies and 13 minutes = crunchier cookies.

And that’s it! You’re done! Easy right? And the best thing of all is that almost all ingredients –except sugar- have a high content of protein.
