Summer’s almost here! And one of the top and most popular refreshers for young and adults is – of course – a good old ice cream right? Today I have for you my favorite, totally healthy and easy option for dessert.
Ingredients (yield about 70 oz. of ice cream)
4 ripe mangos, frozen and roughly chopped.
3 ripe bananas, frozen and roughly chopped.
½ cup of cold unsweetened almond milk.
1 cup of nonfat Greek yogurt.
1 tsp vanilla extract.
1 tbs maple syrup.
½ tsp cardamom.
Preparation (10 minutes and 2 hours to freeze)
Put all the ingredients in the food processor (use 2 badges if needed) and pulse a few times for a couple of minutes until you get a creamy consistency.
Once everything is well blended, put the ice cream in a big bowl with a lid on and freeze for 2 hours.
To serve, you can add the toppings you want, in this case I’m using cashews, a little bit or cinnamon and some fresh mango.
