Mango-Banana Ice Cream recipe

Summer’s almost here! And one of the top and most popular refreshers for young and adults is – of course – a good old ice cream right? Today I have for you my favorite, totally healthy and easy option for dessert.

Ingredients (yield about 70 oz. of ice cream)

  • 4 ripe mangos, frozen and roughly chopped.

  • 3 ripe bananas, frozen and roughly chopped.

  • ½ cup of cold unsweetened almond milk.

  • 1 cup of nonfat Greek yogurt.

  • 1 tsp vanilla extract.

  • 1 tbs maple syrup.

  • ½ tsp cardamom.

Preparation (10 minutes and 2 hours to freeze)

  1. Put all the ingredients in the food processor (use 2 badges if needed) and pulse a few times for a couple of minutes until you get a creamy consistency.

  2. Once everything is well blended, put the ice cream in a big bowl with a lid on and freeze for 2 hours.

  3. To serve, you can add the toppings you want, in this case I’m using cashews, a little bit or cinnamon and some fresh mango.

And now you’re ready for the pool! Enjoy!
