How’s your Summer going?
As you know, we moved to Columbus almost three months ago from Phoenix, Arizona. We, or at least I believed this new place wasn’t going to be hot at all for me, you know, coming from Arizona hell! Hahaha. But then this past weekend happened, it was hot enough for me to think of some “paletas” and… ladies and gentlemen, this is what I have for you today, my take on some Mexican Paletas (ice pops).
This recipe is very flexible, it calls for anything you like as long as you have some popsicle molds at hand.
INGREDIENTS (this recipe makes 8 paletas, 70 ml each. It all depends on your molds)
4 (20 oz total) packs of coconut yogurt.
2 tbsp maple syrup.
3 sliced strawberries.
¼ mango, sliced.
PROCEDURE
Use a medium bowl to whisk yogurt and maple syrup.
Open your molds and place your fruit in them. I made 4 strawberry and 4 mango paletas. Be sure not to crowd thee molds.
Place all the yogurt into a Ziplock bag (or a pastry bag) and start filling up the molds little by little. Adding some yogurt and then tapping against the counter and repeating will help.
Cover the molds and freeze for at least 5 hours.
And you’re done! If you run into some issues while unmolding your paletas, just keep the molds over the counter for about 10 minutes at room temperature and you will be all set.
