How to make Cashew Icing

Hello again!

As you know, I’m in a baking phrensy lately and I SO want to make donuts for you but first wanted to tell you about an almost guilt-free icing that I usually prepare for whenever I need to ice something.



This is going to be quick so here it goes:

INGREDIENTS

  • 2 cups of cashews.

  • 4 tbsp of maple syrup (please use real maple!).

  • 1 pinch of salt.

  • 4 tbsp of water.

PREPARATION

  1. Soak your cashews. There’s two ways to do it:

    • Overnight: put the cashews in a small glass container, cover them up with water, soak them overnight and drain before using.

    • Hot water: put the cashews in a small glass container and cover them up with boiled water, soak for 1 hour and drain before using.


  1. Add your soaked cashews to a blender along with the rest of the ingredients. Keep blending until you get a creamy texture.

You can store this icing in the fridge for up to 5 days and goes great with donuts or my banana bread! (click here to get the recipe).

You can also add some chocolate powder! You’ll love it!
