Hello hello hello!
I was telling you before we were in New York a couple weeks ago to meet one of my best friends and go to some Broadway shows. One of the -many- reasons I love Pamela is because she’s probably one of my smartest foodie friends and just like me, she LOVES donuts; she planned a 4-day donut tasting while we were there and OMG we had so many (is that even possible though?).
Well, that trip inspired this entry. I was thinking of a good use of that icing recipe I made for you guys and BAM! Donuts. Being a baked donut, this is a somewhat healthy recipe that works perfectly as a cake or cupcake batter as well, the texture you will end up with is quite delicious and I think you’ll love it.
So this is my take on a Healthy-ish Baked Apple Donut.
Ingredients (12 donuts, this may vary depending on the diameter of your donuts pan)
¼ cup unsalted butter, melted and at room temperature.
2 whole eggs.
¼ cup cane sugar or maple syrup.
¼ cup almond milk.
½ cup unsweetened apple sauce.
1 peeled and grated apple (your preference, I used granny to balance the sweetness of the recipe).
For the Icing
Pre-heat your oven at 375 degrees and grease a donut pan.
In a large bowl, mix all dry ingredients until well combined.
In a medium bowl, mix all wet ingredients until well combined.
Add half of the wet mixture to the dry one and mix. Add the second half and mix until it’s… Yes! Well combined.
I used an icing bag to pour the mixture into the donut pan but you can use either a spoon or a plastic bad for the same purpose. Note: Fill out your donut pan only by 2/3! Be sure not to cover the hole with batter.
Bake for 13-15 minutes.
Take the donuts out of the oven and let them cool before unmolding on a cooling rack.
Add some icing and toppings and you’re done!
I think this is a great recipe to make with your kids! The toppings options are endless! You can also use some fresh fruit, almonds, chocolate ganache, oh my!
