If you follow me on Instagram or read one of my latest entries, you’ll notice I’ve been having sort of an obsession with cacao nibs. Sooooooo…. I thought of making something baked using them. Today I have my own updated version of the Workout Protein Cookies I already made but his time I’m not using any eggs and will use apple sauce instead, because #FitnessMotivation
You can absolutely use these tiny cookies before your morning workout or even after a good run!
The things you will need will be:
2/3 cup of apple sauce.
1 cup of protein powder. This time I’m using the coconut protein powder from VEGA for flavor.
1 tbsp of coconut sugar.
1/3 cup of almond butter.
3 tbsp of cacao nibs. If you want this dough sweater you can use regular chocolate chips but please consider all those extra calories! It’s on you.
Pre-heat the oven at 350 degrees.
Put all the ingredients in a big bowl and mix until you get a traditional-like cookie dough.
Now you can either use a spoonful of mixture to make each one of the cookies or you can do what I did: rolling the dough in a flat surface (1/2-inch-thick) and use a cookie cutter to get a squared shape.
Put the cookies in a baking sheet layered with parchment paper and bake for 16-18 minutes. Note: 16 minutes = soft cookies and 18 minutes = crunchier cookies.
