Yesterday was my birthday (Happy birthday to me!), I turned 32 and it was an awesome day thanks to my husband. He put some decorations in the apartment and made some sort of Guacamole birthday cake for me!
I’m not sure if I told you this before but Sunday is the day we have waffles for breakfast, sweet for me and sour for him. Since last Sunday was my birthday we went out to have brunch and guess what I had? Yes, waffles!
Today I have for you my take on healthy protein waffles, the ones I make every Sunday!
INGREDIENTS (for probably 8 waffles depending on your waffle iron)

PREPARATION (20 minutes)
In a large bowl, combine flour, protein, baking powder, egg yolks, milk, vanilla extract, cinnamon, salt, sugar and butter. Mix it all together until well combined, don’t over mix! A few lumps are acceptable.
In a separate and clean bowl, whisk the egg whites until they merengue, 3 – 5 min of constant whisking will do the job (this step till make your waffles crispy in the outside and fluffy in the inside, just like you want them!).
Now its time to fold the egg whites into the other mixture, fold for 1 minute and then you’re all set.
Now you can use this waffle mixture and follow your waffle iron instructions.
Just mix all the ingredients together and you’re all set!
To serve, just put a couple of waffles with lots of the compote mixture on top. Enjoy!
